Banana Berry Muffins
Today was my first crack at baking without sugar. I only used natural sweeteners like coconut, agave and banana. I adapted the PPK recipe for Berry Banana Muffins. I adjusted by nixing the brown sugar and subbing in agave while changing the wet/dry ratio. I also didn’t have any dried fruit, so I just pushed golden raspberries into the center of each muffin. Pretty good for a first try. The flavors were great. Now I just need to keep working on my rising action. I can’t seem to get as much “fluff” as I’d like. Ahh, the science of baking.
Also, the other evening I whipped up dinner in 10 minutes flat! This was all thanks to canned beans and easy cashew cheese sauce mix. Tacos and nachos night!
