Spreading the Vegan Love to the Non-Veg
I can’t stop stalking River at Wing It Vegan. We had a holiday party in the office today, so I brought these coconut milk cakes with butter cream and raspberries. I added chocolate chips and subbed all coconut milk instead of coconut milk and soymilk. They were decadent, moist and a perfect compliment to the sugary sweet buttercream.
They were a big hit! I also brought them to a student event later this evening. The “Green” Student Group put on a “Vegan Night In”. They enlisted my help and we served students hummus, pita, these cakes, and spring rolls. The spring rolls were a total hit! Here’s to showing students the vegan way.
